Hello olicato,
vSAN doesn't appear to have any vCenter type limitations documented so this should not be an issue.
However, vCenter Foundations doesn't list HA or vMotion features so this may not be a great option here.
If you are considering implementing a 3-node cluster, have you considered the Essentials Plus package?
