Is there a way to rename the hard disk in Workstation so that it reads something a little more helpful; so for example, it there a way to rename "Hard Disk (IDE)" to "Main Disk", maybe?

Generally speaking no however one might be able to hack the executable with a hex editor although I wouldn't recommend it.
With vmware-vdiskmanager.exe you can rename the vmdk using the "-n" option.
e.g.: vmware-vdiskmanager.exe -n old.vmdk new.vmdk
However DON'T run this command on a vmdk with snapshots!!!
After renaming the vmdk you also need to modify the VM's setting in the GUI or by editing the vmx file.

I could be wrong however I believe the OP is referring to the Virtual Machine Settings window where in the Device List it shows "Hard Disk (IDE)" or "Hard Disk (SCSI)" and or "New Hard Disk (IDE)" or "New Hard Disk (SCSI)" if added after the original VM is created and not the name of the .vmdk file.
I think you are right, looks like I misunderstood the question.
