You could create a new VM without any disks, once created edit the VM and add your existing disk. ..

Or you can restore the VMX from old logs (provided you have those).
How does one go about restoring the .vmx files from old logs?

If you just want to access the files in the vmdk, you can use the VMware Mount utility (built into Workstation 6.0 and above, separate utility download on earlier versions) to mount the virtual disk as a drive on your host.
If you want to re-build the virtual machine, just create a new VM using the same settings as the old one. When you get to the step for the hard disk, select "Use Existing" and browse to the vmdk file. Or, recreate it using the log files.
If you search the Fusion forum, you will find a perl script by Eric Tung called vmxRecover.pl which will do just that.
