Has anyone been successful in virtualizeing and deploying IE8? If so is there a guide out there on how to do it?

Sure thing.. Only thing to remember is to not allow the setup to apply updates during the capture. This will not only update IE8 bits but OS components as well..
I've captured it on XP with IE6 locally installed and it works..
Have you been able to deploy to Windows 7 64bit?

Not sure but I think I'm in the same boat. I'd like to deploy Windows 7 64-bit with IE9 as the native browser and IE8 as a virtual. However I am starting with Windows 7 SP1 which comes with IE8 installed. So how do I "capture" IE8?
Obviously I'm meaning to capture the 32-bit IE8 since you cannot Thinapp 64-bit applications yet.
Since Win8 comes with IE8 you can not use Win7 as your capture environment. You need to use an OS where you can install IE8. I've used WinXP
Internet Explorer, even IE 9, exists both in 32-bit and 64-bit. Windows, nowadays, offers a proper way to uninstall Internet Explorer.
If you still want to capture IE8 on Windows 7, what you can do is uninstall Internet Explorer and then reinstall while capturing.

Have done it just for fun so I didn't test it thoroughly but it seems like to work fine.

I did a capture of IE 8 on Windows Vista for thread http://communities.vmware.com/message/2190397#2190397 .
The same thinapp I attempted to run on Windows 7 64 bit, It ran without any issues. I did even browse couple of sites.
