Just in case this is of use to anyone (and after having used it for just a day, I really can't see why it shouldn't be in everyone's toolbox), I thought I'd point to Veeam's Expolorer for MS Exchange. It's completely free and will work with any backup of exchange database and logs (public folders too).

Only caveats I have found
a) Exchange 2010 and above only
b) 64 Bit Only
c) You need Outlook 2010 64 Bit installed to export to PST (but trial version is fine)
d) You need to install Veeam B & R 6.1 (although again the FREE version is fine)
