VM slow response time

I have five virtual machines in Fusion 3.1.2 on my Mac Pro (12GB of RAM, Dual 2.8GHz Quad-core processors) running 10.6.6 - Windows XP, Windows 7, OSX Server 10.6, Ubuntu 10 and Solaris Express 11. A couple of weeks ago, I noticed considerable slow response times while using Windows 7. It was actually grinding to a halt during my use of it. At the time, I didn't think much of it and shutdown Windows and closed Fusion. Now, all of my VM's are exhibiting extended boot times (upwards of 5 minutes or longer to completely boot) and once they are fully booted are so incredibly laggy, they are unusable. I've uninstalled/reinstalled Fusion, repaired permissions in OSX and went through this KB (1014534) from VMware with no change to the issue. I have other Macs running 3.1.2 on 10.6.6 without issue.

Does anybody know of anything to try?

1) Disable system restore in each of the windows VMs.

2) Make sure you don't use AVG antivirus.

3) Make sure you've excluded scanning the shared folders in whatever A/V you do use.

4) Have you run a memtest on the Mac?
