ESX 3.5 and vCenter 2.5

We are starting our path to virtualization!

My question which should we setup first? ESX host or vCenter server or it does not matter?

if you plan on running your vCenter Server as a VM, then you must build ESX first. Otherwise if you are starting from a "clean slate", then I guess it really doesn't matter.

For me, I would build my vCenter Server first, set that up, then start adding hosts into the environment as each one was built.
