Resize disk with Converter

Hi,

I am trying to resize a disk with Converter.  My server is about 2.5 TB total and the conversion is slated for 7 days.

This server is in constant use, and asking for a downtime of 7 days is ridiculous and impossible.

Is there a different, better way?  The disk I want to resize is about 500 GB too big, but another drive is about 1.5 TB to start.  Can't I just convert that drive without the whole server?

Any thoughts or help would be greatly appreciated.

Yes
but why not just create a new blank vmdk with desired size and then copy the files with robocopy or rsync ?
