How to convert existing VM with 1 disk but 2 partitions to a VM with 2 disks (one for each partition)

We have a VM (Windows Server 2008) that was originally created with one virtual hard disk.  From that disk, two partitions were created on the VM (c-drive and d-drive).  This is not our normal practice (usually we create one disk in VMWare for each partition.  In this case, unfortunately, the c-drive has reached near capacity, and it cannot be extended as there is not any contiguous space.

What is the best practice for converting this VM such that each partition has its own vmware disk?

Thanks,
Jeff

Add a new disk and assign it as E:\, copy the data from d:\ to the new E:\
When done remove 2nd partition from the first disk.
Change driveletter for 1st partition second disk from E: to 😧
