You can create a shorcut and a batch file to load the virtual machine with different priorities AND also in said shortcut choose to run the vm as a different user. While it's a workaround at least until it's formally implemented that may help you.

Here's where I go to get current builds of Windows 11. https://uupdump.net/. I use the Windows 11 dropdown and select 22H2 (Moment 3) which BTW is the only current distros (even moreso that what Microsoft shows on their website) It will not throw you into the Insider as their Canary and Dev versions will (I've tested multiple vm's with each option and the Moment 3 builds are the best) I then used this build

Windows 11 Insider Preview 10.0.22624.1610 (ni_release) amd64 within the Moment 3 on my live machine WITH Vmware 17 Pro running and 1 VM of Windows 11 Enterprise (for testing) and the overall performance of both the main machine as well as the VM's improved over 20%

I've been using VMware Workstation Pro since version 15 and have to say it just keeps improving on what I would consider a fantastic solution for developers and technicians.

I first started using it to virtualize Windows 10 Pro to test different configurations and softwares without risking my main boot Operating System.

It's also excellent for students and seasoned technicians preparing for certifications...if you make a mistake, no problem, just go back to you last good snapshot...you are taking snapshots before any changes riiight?

Keep up the great work VMware dev team!
