keyboard lag on VMWare horizon

HI All, we are experiencing a strange issue with our VMWare Horizon remote desktops, we have 10 RDSH Desktops in a pool across 2 hosts, users of the pool are experiencing serious delays when entering text in MS Office applications, this occurs regardless of protocol used to connect. the host and VM details are as follows

ESX01,ESX02
CPU: 2 x Intel(R) Xeon(R) Gold 6242 CPU (64 cores @2.8GHz)
RAM: 512GB DDR4
Local Storage: 256GB NVMe RAID 1 BOSS
Storage: 20Gb/s link to iSCSI SSD Array
Network: 10Gb/s link to main switches
GPUs: 1x NVidia Tesla M10

Horizon RDSH VMs
CPU: 8vCPU
RAM: 32GB
Storage: 200GB
GPU: M10-2a (2GB Frame Buffer)
Expected Usage: no more than 10 Office Knowledge workers with average of 6

this issue began happening last week and I cant find any issues in the hosts that would be causing it, the VMs with issues are spread across the 2 hosts and do not show exceptional CPU, Memory, or GPU usage.

Hoping someone else has experienced a similar issue and can help
