VMware workstation freezing on Linux Mint 20.1 host

I have VMware workstation installed on a Linux Mint 20.1 host with current updates installed. I am currently using the evaluation license of VMware workstation to test. I am having issues with VMware freezing. The guest OS (Win Server 2019 Essentials) freezes but so does the VMware GUI. I'm not able to switch tabs or use the menus.

I noticed if I watched the system monitor it seems that VMware freezes and at the same time one or two of the CPU cores is maxed out at 100%.

The guest is configured with 4 CPUs with 2 cores each and 6GB RAM (host has 16GB)

I'm not sure where to start looking to troubleshoot. Please advise.
