After Vmware told us that Appvolumes is not designed/supported for our persistent desktops, we have decided to ditch UEM and just use app volumes to deploy apps. As far as any uem settings that would be lost, (ie background, registry settings, etc) does anyone know what would be the best way to deploy those settings to persistent desktops?

Are you confusing that with app volumes, which is not designed for persistent desktops. I know because we do it and its a pain, appvolumes needs the underlying os to disposable, as it leaves things that build up and cause problems. I've never seen the same thing said for UEM. All UEM does is zips up files and puts them back, or pushing files down like group policy does. As I understand UEM I see no reason for them to state it doesn't work with persistent desktops and I'm pretty sure there are tools to keep them in sync.UEMdev I think will confirm.
