we have VMware Horizon 7.0.0 we need upgrade it to lasted version,
VMware Horizon View Composer on the same server with vcenter ,
vcenter version is 6.0.0
plase can any one advise for the risk on the process ,
any one can to provide us with formal procedure for the upgrade process.

Direct upgrade from 7.0 to 7.12 horizon is supported as per upgrade matrix:

Make sure your current vCenter&ESXi versions are supported with horizon 7.12 before upgrading. You can find this info here:

Once above informations are validated, you can follow below guide to upgrade horizon:

Typical upgrade path sequence is: View composer server > View connection servers > View agent on master images > View clients.
Take full backup and snapshot of all servers before performing upgrade: VMware Knowledge Base
The other risks post upgrades includes use of old models of zero/thin-clients in the environment, make sure they are supported with latest release before upgrade:
