In a vSphere 6.5 environment made of 8 ESXi 6.5 nodes using several iSCSI targets environment I need to measure and collect:
I need to collect as well the number of I/O operation and the amount of data performed by a given ESXi server, a given guest VM and a given ESXi host on a given datastore.
I need to get the data in a format like .csv so I can insert them in a document.
How can I collect such information?

ESXTOP is a powerfull but quite complex tool.
Can anybody please suggest how to collect data about IOPS?

I'd recommend looking at some Google searches because this is fairly commonly covered. There are lots of options, yes, and knowing what each does it very important.
VeeamOne is an easy-to use tool for gathering IOPS (and other) VM statistics. Might be worth trying.
