In much the sme way you can just transfer user data, documents, possible applications... (i'm referring to the windows File & Transfer wizard), to copy to new PC, can this also be done between two VM's on the same network ?

ie. you want to set up a Windows 10 VM and migrate some things, but not others from  a Windows 7 VM..

Just copying the VM to the new location would be out of the question, as you don' t want a complete copy in all cases.

Sure, why not? If they're accessible over the network you can copy whatever you want from within one guest to the other.
