Any tips on how to query for a VM deletion task? I've seen posts on how to do it when using SQL DB for vCenter but we are running VCSA 6.5 Update 2.

Don't query the VCDB. Just don't do it. Use the events and tasks information available in logs or API to search for such an event.
Trying to use Get-VIEvent via powershell but it returns:
Error in deserializing body of reply message for operation 'ReadPreviousEvents'
Then you should fix that rather than try to find a workaround. What version of vCenter and what version of PowerCLI?

You need to upgrade your PowerCLI version to the latest. You must first uninstall PowerCLI 6.5 and then install the latest from the Gallery.
