I am running out of space and adding additional hard disks to the server to create a second LUN.
My concern, is there any risk of losing current data on the existing datastore while proceeding with the "increase Datastore Capacity" procedure.
There's always that risk and personally I avoid trying to span a VMFS datastore across multiple extents. It just causes problems and makes troubleshooting more difficult. It's wise to have a backup before altering underlying storage.

To avoid losing any data, I would go for a second datastore and use same when provisioning new VMs.
