You can take a look at this article:

http://masteringvmware.com/how-to-upgrade-vcenter-server-6-to-vcenter-server-6-5-step-by-step/

Make sure you take a snapshot/backup before you proceed with the upgrade

Hello,

The above-shared procedures hold good please ensure that create VM Backup or Snapshots of existing VC & PSC systems.

Before the upgrade please read the contents of these Docs:

--- Important information before upgrading to vSphere 6.5 (2147548)

--- Best practices for upgrading to vCenter Server 6.5 (2147686)

--- vSphere Upgrade Guide for ESXi & vCenter _  https://docs.vmware.com/en/VMware-vSphere/6.5/vsphere-esxi-vcenter-server-65-upgrade-guide.pdf

If in case the upgrade fails for some reason ensure that you collect the logs bundle of VC & PSC and then revert to Snapshot or restore the VM Backup, you can post here if you need any further help.

By the by we can't take Vcenter backup using snapshot.

there is a different process for that..the below KB could be helpful for the backup and restore process

You can still use snapshot as a fall back option.
