I would like to create a role for an ovftool only user and would give this role the least possible privileges. Can anyone help with this? I did not find anything inside the documentation.

Alternatively you can create a vSphere role/user with privileges you desire and use that user for Ovftool arguments.
Keep in mind that Ovftool must have privileges to place the Virtual Machine on the destination forlder or resource pool etc.
