What is the headers parameter used for in the 'readModelEntitiesBySystemQuery' method?

I have seen tons of examples using the 'readModelEntitiesBySystemQuery' method  of the vCACEntityManager but every one set the headers to null. What is the purposed of the headers parameter? Is is simply for setting the header on the http request?

Yes, AFAIK this parameter allows the caller to provide OData client http request headers.
