At part of our backup policy
I've setup a weekly clone schedule-task to each VM using vCenter.
That will clone the machine from my Production-DS to a separate Backup-DS.
These are the issues i've encountered
1. the second time this scheduled-task is running it fails because there is already a clone and it won't overwrite it.
2. I want to edit an email subscription for the clone scheduled-task. i'm trying to do it via 'right-click --> Properties' of the task. but i can't get through the 'Name and Location' screen with an error "An Item named 'XXX' already exists. Enter a new name."
Any idea how to solve this issues?

Unfortunately we cant achieve what you mentioned only with the scheduled tasks since we cant provide a dynamic Name for VM in vCetner Scheduled tasks.
As Harjith suggested its good to use a PowerCLI script or other automation approaches like VMware orchestarator to achieve this.
