We need to mover about 11 Prod VM's to new datacenter. What's the best way?

Just because you don't have that many, you can do this manually.
* Backup the data from all the virtual machines manually
* Copy all the virtual machines folders into an external HDD "Use vSphere Client"
* Paste all the virtual machine folders into the new datacenter\datastore. (physical location ) "Use vSphere Client"
* From the new datacenter\datastore right click the .vmx file from the VM folder & "Add To Inventory"
* Power on the VMs & modify the settings of the guest OS's network for the new environment. Done!

Sometimes moving of data may fall under regulations depending on the industry (health/hospital, military, banks, etc) that the VM(s) are for.
There might be rules/regulations in transport of data that could contain customer and other sensitive data through external media (such as hard disk, tapes) and how this should be handled before/after transfer/transport of data.
It would be best to check these rules also (aside from the technology required) so as not to run afoul when IT auditing comes.

If you have a tunnel between the 2 locations you could do a v2v and sync the data on completion.
