I have some older servers running 5.5 enterprise, we are building a new site and with the new servers I want to upgrade to 6. Question is can I keep the old 5.5 servers running after I upgrade the licenses to 6 for the new servers until I migrate over to the new servers? Or since I upgraded the licenses do I have to upgrade the old servers?

The official upgrade path is to run the new hosts in evaluation mode (up to 60 days), and upgrade the licenses when you are ready to shut down the old hosts.

2 Options
1 . Create New Setup with evaluation add the existing hosts , migrate servers .
Apply licence and upgrade old servers to new version
2. upgrade old vc to new version apply new vcenter licence only
add new esxi hosts and migrate vms / servers , apply new esxi licence

First you have to update the vCenter then ESXi host .
It is not as simple as esxi upgrade but if you follow proper steps and refer documents you will able to do that .
