Interesting. Which version of OS X are you running on your host machine?
If you open the Virtual Machine Library (from Fusion's Window menu), can you see the virtual machine's screen contents there, while the VM is running?
Running El Capitan 10.11.1
Since my post i got it working. I turned on "Accelerate 3d Graphics" and it then displayed the screens during install of CentOS7.
After the installation completed I then turned off the "Accelerate 3d Graphics" and the OS screens display fine.
To answer your question "can you see the virtual machine's screen contents there, while the VM is running?" yes i was able to.
