Is it possible to Capture the Existing ESXi Server as an Image for Auto Deploy?

I don't think so, but existing stateless image can be deployed as statefull host, this feature is supported from vSphere5.1 onwards.

Do you meant to say that you have a state-full host and need to use the same to be used as an image for auto deploy .?

The image/ISO that you have used it for install on hardware, can be used it for Stateless deployment. If its ISO, you need to convert it to ZIP file format and upload to autodeploy server (this procedure mentioned as part of image creation & stateless deployment).

You cannot extract out the installed ESXi image into Zip format from the server.
