I'm not sure whether VMware Server has the option to add an existing virtual disk to a VM. If this is possible, it would be the easiest way to do this.
If not you can create a new VM with a virtual disk that has the name of the one you have. After creating the VM, replace the virtual disk. Another option is to create a VM and attach the virtual disk to it by editing the VM's configuration (.vmx) file.
