That's easy, use perl:
perl -i.bak -p -e "s/online/offline/" test.txt
but is it possible with bash?

Try the sed command, e.g.
sed 's/online/offline/g' filename
many thanks. I have tested it and all is ok.
plink.exe -load <Profile> perl -i.bak -p -e "s/online/offline/" /test/Server.txt
