Well, I'm not the only one.
I have just uninstalled the 754035 build and reinstalled the old 646643 and now I can choose the vmnets without problems.
I hope that this bug will be solved because I was very interested in try the Hyper-V Guest OS.
I already have a cluster with 2 Hyper-V in 646643 and I have no problems however I wanted to try this new feature of the new build.

Also I found it puts an invalid entry into the VMX file if you click in the dropdown area. Sets the custom vmnet to be:
ethernet0.vnet = "VMnet-1"
When working there is no hyphen in the entry and should be:
ethernet0.vnet = "VMnet1"

Hi Felix-The Cat, excuse me for late.
I have tried with the new July Technology Preview however, not everytime but sporadically I still have the same problem but I have tried on Windows 8 RP Host.
Now I have installed Windows Server 2008 R2 as Host System, I'll try here and see if the problem is gone for me.
Again same error, however now I can't edit a vmnet on an existing VM but if a try to add a new ethernet card I can select the vmnet without problem.
I'm attacching again a screenshot and my vmware-ui log file.
I'll come back to the 646643 because actually is the only build that is working very well for me.
Oooops, while I have uploaded the 2 files to my previous reply I have tried to create a new vm and I can edit the vmnet config of an existing ethernet card without problem.
Maybe now the problem is for only the vm created with a previous build?
Actually I'm thinking to change my decision and stay for now with the july 2012 preview and see what happen.
