Labs and testing environments are useful to see and "touch" the products...
But productions environments can be different.
With you VCP you should also look at VMware Partners - not only do they need VCPs for different parner levels but it will be a quick way to gain hands on experience

I'm not sure you'll find an official course in France that is delivered in English, you might need to travel outside of France or even look into the possibility of doing the course live on-line with VMware directly. I work for Global Knowledge, we deliver the official training across Europe but in France our courses are delivered in the French language.
