I have been researching a space issue on one of our VMs all morning. I finally found that the VM has two snapshot files (120GB total) on the datastore.
The problem is that these snapshots are not listed in the snapshot
manager. How do I rid myself of these snapshot files, reclaim the 120GB of disk
space and keep everything in tact?

just be careful, deleting a snapshot that large could cause some heave disk I/O. If this is a production VM, you may want to do it after hours.
...but I agree, create a new snapshot in snapshot manager, then delete all.
As others have said I have always created a new snapshot and deleted all. Here is a KB article on how to do it via the command line. Also make sure you have enough free space to comitt the snapshots.

Describe your issue and your current environment (VMware product, edition, version, ...) and attach e.g. a screenshot of the datastore browser as like the original poster did.
When we do this the remove fails and I often just end up with another vmdk file.
This usually happens if you are low on free disk space on the datastore.
