The best way to do that is en each ESX, create a VM and give a big ammount of storage and then install OpenFiler (an ISCSI software) into the VM.
When Open files was installed, you can share the disk like an ISCSI to the other ESX)
Then, in the other ESX, you may create a VM, and give the big ammount of storage, and install open filer, then share the storage by iscsi to the first ESX.
The other option is the same but the difference is not install open filer and up the NFS services in each linux VM, and share the storage.

Thanks for the idea but I don't think it would be effective to do it that way.
I say this because it requires taking more resource from each host just to run a vm that does nothing gaining no performance gain, which I am trying, though only marginally, to do.
Essentially, by having a centralized store (without buying a SAN) I can then allocate host resources (CPU, Memory, etc) to the VM stored on that datastore.
Hence, if I can run NFS on my ESX hosts then I would prefer to do it that way.
AM I wrong? Any other ideas? Can I just run NFS without worry?

Your idea has value, but unfortunately, I can only work with the current hardware and software my company has bought.
I really need to know if I can simply employ NFS on each ESX and run it simulataneously as VMware. I really don't think it should be a problem, but I want to make sure before moving forward.

Short answer is no. ESX was not designed to be an NFS server, nor should it be. So there MAY be NFS Servers that will work, but they have to compiled and built on the ESX host, which is beyond the scope of this thread, so we are going to say NO NFS on ESX host.
