I would think you are using HP OEM software vs true whitebox OEM software.
I've used both a corporate and whitebox OEM installation of Windows 200X without any issues.
You may be able to add the following to your .vmx config file:
I've seen success with VMware Workstation, Server, and Player. Not sure how ESX is going to treat it.

Running ESX3i (integradted HP edition USB stick) on a proliant ML350 G5.
Trying to install SBS2008 ROK(HP OEM) gives me that same error.
Would I be able to use the code provided in HP box on a normal micrsoft white label OEM ?

I have tried that SMBIOS..... = true but it's NOT WORKING :((((
Anyone have an actual fix for this? In my case, I'm installing SBS 2008 Std. There is no Standard version trial of SBS, only SBS Premium, so my license key wouldn't work.

I think the installation media is the same for both editions of SBS 2008, and the setup installs according to the key you entered.

I didn't get a chance to try trial version method. I tried something else and it worked perfectly.
I installed SBS 2008 on the server. Then, from another machine I installed VMware Converter 4.0.1 (free download) and converted the physical server to a VM. Loaded it into Server 2.0.1 and it started right up. Installed VMware Tools. And activated Windows. I had to type in the Key from the sticker on the server and it activated. Piece of cake.
It probably would have activated anyway, but for posterity, I added the smbios.reflecthost=true to be safe.
Don't know how well this would have worked had it already been activated on the physical machine. Fortunately, this was a new server so I didn't have to worry about an already-activated OS.
Ofcourse that works too.
But you have to have 2 servers, one to install physically and one with vmware already running on it.
Just to say that SMBIOS.reflect = TRUE works in ESXi (Vsphere) 4.1 with HP ROK 2008 R2 std
This worked fine for me also... Very simple to do even. For newbies you can add it ni the Configuration Parameters onthe Options tab of ESXi 4.1.
I searched and searched on this I found this thread and the other thread I put it in as stated with no luck.
Then I found this HP support document that I would like to share. The solution does work as stated below but it has to be exact.
I have found the easiest way to insert the line is to go to Virtual Machine Properties on the options tab, click on Configuration Parameters and add a line SMBIOS.reflectHost TRUE then click OK.
