What is the recommended high availability solution for 2 switches(Cisco 2960G), 4 ESX servers
and 8 NIC's each server. I need to reserve in each server:
1 port for admin console
1 port for vMotion
2 ports for storage (NFS)
So the other 4 ports are available for etherchannel trunk to let the VM's
talk across.
The 2 rack switches will be connected to a pair of Cisco 4507's for the core redundancy.

Possible HA solutions are very well described in tr3428: NetApp and VMware Virtual Infrastructure 3 Storage Best Practices.
Don't forget to reconfigure cisco switches for RSTP or Rapid-PVST.
Also I don't see a good reason for using separate single ports for vMotion and admin console: you have VLANs so use 4 ports (2x2) for VMs and 4 ports (2x2 again) for managementvmotionstorage

take a look at my blog post. use the 2nd image down, except take out the Fault Tolerance NICs in your case. Make sure your 2960Gs are stacked or have an etherchannel trunk between them.
