I'm in the process of planning out a vSphere 5.5 U2 upgrade to vSphere 6.0. This particular environment is currently architected as follows:
Looking at KB 2108548 (http://kb.vmware.com/selfservice/microsites/search.do?language=en_US&cmd=displayKC&externalId=210854...), it appears this setup is being deprecated in vSphere 6.0. As such, I believe my vSphere Upgrade process looks like the following:

I would install the SSO (PSC) and the vCenter each on another Server.
Yeah the procedure looks fine, in addition, you can go for PSC behind HA mode to have redundancy as running multiple VCs with one single sso can have larger impact in case of issue with SSO. here are few articles for the same :-
