I know SRM supports multi-site topologies, but what about vSphere Replication? Would it support a three (or more) site topology where:
Virtual Machines at Site A are protected at Site B
Virtual Machines at Site B are protected at Site C
Virtual Machines at Site C are protected at Site A
would you just use multiple vSphere Replication servers?

This is supported for VR as well. Yes, you would deploy a VR server (additional appliances as scale requires) to each site.

vSphere replication can replicate to multiple sites, irrespective of SRM setup, SRM needs separate instance of SRM server to protect different site. In VR you can use to same instance to pair to multiple sites, you will need additional VR server only if the total number of replication on a node is more than 200 ( including incoming and outgoing replication )

new jersey to philidelphia..they have active replication from nj to philly.we have a new setup at a different site.Can we try pairing the new setup with existing nj vra to make it a multisite replication

Yes, you should be able to do that. To add, VMs can only be replicated between 2 sites. For ex: VM1 can only be replicated from Site-A to Site-B and the same VM cannot be replicated from Site-A to Site-C.
