I am working on a test deployment of vCOps 5.6. I deployed it 4 days ago, and I still have a number of items (hosts, datastores) that don't have a baseline calculated yet. In other words, when you drill down to the object in vCOps, it says "NORMAL: Not calculated yet."
I understand it may take a few weeks to get a true baseline, but I want to speed this up for testing purposes. I have read through 2 or 3 VMware Docs, but haven't been able to find out where I can tweak this. vCOps is highly customizable, so I'm sure the setting is there somewhere.

There is no real "fast-forward", in 5.6 it is a bit faster in certain areas and if machines are nearly "constant" it might get faster. If however systems are pretty "flexible" it might even take longer.
Many people think this is a clear rule of 2-3 weeks, however it is a day by day decision taken on the DT recalculation every midnight. So some objects might be there quick, some might even take much longer than the usual 2-3 weeks.
You can try a support ticket with VMware, but it will not bring you anywhere as it simply will need time.

It takes seven days for DT to appear in the UI. Nothing you can do to modify that, sorry.
