I know that business groups set up resources in the catalog.
Here, I set which storage is assigned to which VMs. But when I deploy a VM using a catalog, can I create a blueprint to choose a different storage?
(e.g., create a Xaas or a new workflow...)

You can force a disk onto a specific datastore using a custom property
VirtualMachine.Disk<N>.Storage
You have to set it before the VM is requested and the datastore has to be available to the Reservation the VM is requested for

If you're using XaaS then definitely & I believe IaaS Custom Forms should allow it also. Like I said, you need to set that property to the name of the datastore. You will have to sort out what values to present to the user and then provide the property as a "Show in Request" value for the Blueprint
