Hi,

You can use vCenter Server Heartbeat to get high availability for vCenter.

why protect the vCenter Host OS? I say, ensure you use a remote DB and properly protect that with routine backups and maintenance. After all you can bring up a new vCenter Host OS, install vCenter and connect back to the existing DB instance in probably less than 30 minutes.

With vCenter down, the only thing you lose is DRS/vMotion. HA will continue to work with no interruptions.
