I'm virtualizing vCenter Server. Should I install it in a Windows 2003 32 bit guest? Or is it better a 64 bit guest?

I say 64bit if you can. Even though vCenter is 32bit it will still be beneficial. However, 32bit will be fine as well. After all x64 is only required if you are going to manage more than 200 hosts.

nowadays it is maybe recommended install vCenter in a 64 bits systems.
But really it isn't a needed requirement but in big vCenter environments.

64 bit may be required in future versions of vCenter.
Moving forward with Windows 2008 R2, I think you need to go for 64 bits
