I installed VC on a VM, so it can benefit of every VSphere features such as HA and Vmotion. I just can't stop playing with these toys
But you should consider locating your VC database on a mutualized SQL2005 server for performance, database size, easier maintenance, and licencing reasons. I dit it this way, everything's running smoothly.
there is no right or wrong answer, both are supported and both have benefits. We have vCenters running as both virtual and physical. I think, the best thing to look at is to ensure you have a good backend DB. I would recommend a physical SQL 2005 x64 Enterprise cluster.
One of the benefits of virtual is you get HA/DRS, plus you don't have to purchase hardware.

For small/medium environment I prefer the VM solution.
With a local SQL or SQL Express (for small environment).
IMHO, in those cases is more flexible.
