We have VI3 and VMware vCenter Server Foundation (Limited
to 3 Nodes) License, and we want to add one more ESX host, connected to
vCenter.
What option do we have, in order to accomplish this?

you need to buy the licenses for the 4th host. You can then combine these licenses at Vmware's licensing portal.
Using this new License key will allow you to add the 4th host.
I'm not use that you can "expand" the number of nodes of VC Foundation... the only way that I know is switch to VC Full.
