Shared Storage & best practise

I run 5 blades in a ESX cluster, and am currently set up to have one LUN per VM.

As my SAN storage device has now met its limit to the number of LUNs that can be created, I'm looking at creating a large shared storage volume.

I've had some trouble finding clear concise information on the topic, so I'm hoping someone here could help me out.

I have multiple SAN devices capable of MPIO (as I know that's a requirement at least for Microsoft's Shared Storage) with two 1GB fibre connections.

Our current management approach is that each SAN LUN is imported as its own datastore in vCenter, and named similar to the associated VM. Can a similar methodology in organizing the VM files be implemented? Is there a best practises that states otherwise?
