Prevent DRS moves for a single VM?

I am new to DRS / vMotion, and I'm trying to see if it can work in my environment.

I have application server VMs, which I would like to use DRS to balance the load for.

But, I have a VM per ESX, which I don't want to move ever (it's running snort, watching the application server traffic). I don't want it to be moved to balance load, or even DRS'd off when the ESX host is going down.

Will DRS allow me to lock a VM to a host? Can I prevent it from being manually being vMotioned too?

Yes, DRS gives you the granularity down to guest level (know as Automation Level) to either enable or prevent DRS migration.
