P2V SQL server, resize partition

I have a SQL 2005 server that has its DB located in a 500GB partition.

I'm thinking about P2V the system, but then I will need to resize that partition. I'm asuming this is okay? Should I expect any surprises after the P2V resizing the DB partition?

Hello.

Using Converter to re-size the partition should not create any problems for you. Just stating the obvious here, but I would recommend to stop the SQL services during the P2V.
