I am trying to find the procedures for moving the vCenter databse from SQL Express to SQL 2005 on a new server. Anyone have any info? Anyone have any first hand experience with this?

Follow the KB.

Basically you have to move the DB (this can be done with Management Studio) and change the ODBC connection.

So the ODBC connection from the vCenter to the SQL server is all that needs to be changed to let vCenter know where the database has moved to?

Yes.  Once the DB has been moved, just update you ODBC connections
