Load Balancing and NIC Teaming

I've encountered a Vmware ESX environment where there are multiple uplink adapters connected to vSwitches but the Load Balancing and NIC Teaming features are not activated. Why would anyone do that? Seems to me that if there are multiple physical adapters then these features should be employed.

There might be a physical configuration that prevents it form being used - but you are right if you have multiple pNIC uplinks then you take advantage of all of them - whether using load balanding or active stand by configurations -

You are correct, if there are multiple pNIC's are connected to the Vswitch, then we need to use the load-balancing and teaming features.

But some times, it may be possible that these pNIC are connected to the different pSwitches and they provide the redundancy from the switch end.

You can verify this from the pswitch end...
