Converting to SQL 2008 database from Express

We are rebuilding and upgrading our vCenter server and I have a few questions.  We are going to wipe our current vCenter server and load 2008 server x64.  Then we are loading SQL server 2008 x64 and vCenter 4.1 on the same server, then reattach the hosts.  My questions are about the vCenter database. We now use SQL Express.  I have very little experience with SQL and I'm not sure how to preserve the existing database information before the wipe, then restore it into the newly installed SQL 2008 server.   Could someone sort of outline the procedure for this for me? Are there any gotchas we have to watch out for in doing this?  How important is it to preserve the old database info?  Is it OK to just start a new database and not worry about preserving the SQL Express data?  That would be alot easier. Thanks.
