Converting host licences to centralized and vServer.

We have a small number of hosts which currently use host licencing and are indivdually controlled via VMware Infrastructure Client. The plan is to consolidate these hosts into centralized licencing and control them via vCenter Server.

Do I install vCenter first then regenerate the licences as centralized, apply the licences to the vCenter then update the hosts to the new licence. Or is there a better way?

That is the way you will have to do it - install VC and run it in evaluation mode move your ESX servers over to the licensing server - regenerate your licene add it to the license server and you will be done -
