Is there a way to change the vcenter ip if during vcenter installation on the FQDN part the vcenter ip was inserted?
No, which is yet another reason why you shouldn't be installing vCenter Server without an FQDN.
In vCSA 6.7U3 you can use PNID change feature and set it to FQDN
